Gluten intolerance, also known as coeliac disease or sprue, is an inflammatory, autoimmune disease of the small intestine.

People with a gluten intolerance react to gluten, the so-called gluten protein, which is contained in common cereals such as wheat, barley, spelt, rye and green spelt. Even ancient grains such as kamut and emmer contain gluten. Once diagnosed with coeliac disease, cereals containing gluten should be avoided for life.
